Recipe: Baked Spaghetti

So, with my 365 project over and winter's dark days upon us, I was at a little bit of a loss of what to post on my blog in the next few months. I've been working really hard this week at actually planning our meals out before the week begins, so I thought I'd share tonight's recipe! This is one that Jacinda shared with me a while ago, and we love it.

Baked Spaghetti

Mix 13.25 oz. cooked spaghetti (we use whole grain - you can't even tell a difference in this dish!), 2 eggs, 1/4 cup Parmesan cheese, and 1/4 cup melted butter and spread in the bottom of a 9" x 13" pan.

Soften 8 oz. cream cheese and add milk until it's smooth enough to spread on top of the first layer.

Brown 1 lb. hamburger and stir in 26.5 oz. of spaghetti sauce.

Spread hamburger and sauce over spaghetti layer, then top with 8 oz. of shredded Mozzarella cheese.

Bake in a 350 degree oven about 30 minutes, until the cheese is melted and it's bubbly around the edges.

This is obviously not good for my getting healthy in 2010, but...Yum-o!
